Sugar-Free Chocolate Cream-Stuffed Muffins

A dark chocolate muffin with a hidden pocket of creamy chocolate in the middle is the kind of breakfast treat that feels like dessert. These sugar-free chocolate muffins bake up tall and domed, then get a smooth chocolate cream center piped inside.

The muffins are almond and coconut flour with cocoa, eggs and Greek yogurt, sweetened with allulose. The filling is unsweetened chocolate, Neufchâtel and yogurt, and each of the 8 muffins has about 145 calories, 9g protein and 3g net carbs.

The filling goes in after baking. That keeps the center smooth and creamy instead of sinking or drying out in the oven.

Why You’ll Love These Sugar-Free Chocolate Muffins

  • Hidden chocolate center. A creamy pocket of chocolate in every muffin.
  • Tall, domed tops. Bakery-style muffins with lightly cracked tops.
  • 9g protein each. Each of the 8 muffins has about 145 calories and 3g net carbs.
  • No frosting needed. All the richness is inside.

Ingredient Notes

Flours and cocoa. Five-eighths of a cup plus 1½ tablespoons of Bob’s Red Mill almond flour, 2 tablespoons of coconut flour and 3 tablespoons of natural cocoa make the dark crumb of these sugar-free chocolate muffins.

Eggs and Greek yogurt. Two large eggs and ⅔ cup of FAGE Total 0% Greek yogurt keep the muffins moist and add protein.

Chocolate cream center. Two-thirds of an ounce of Baker’s 100% unsweetened chocolate is melted and mixed with Neufchâtel, Greek yogurt and powdered allulose into a glossy, pipeable cream.

Allulose. Granulated allulose sweetens the muffins and powdered allulose sweetens the filling. Allulose is a rare sugar that the FDA allows to be excluded from the total sugars and added sugars declarations on the Nutrition Facts label.

Success Tips for Sugar-Free Chocolate Muffins

Fill after baking. Piping the cream into baked muffins keeps the center smooth and creamy.

Watch the temperatures. Keep the melted chocolate lukewarm and the dairy near room temperature so the cream stays glossy instead of seizing.

Do not overbake. Take the muffins out when they are domed and just cooked through so they stay moist.

Keep the tops. Trim the removed cores into thin caps and set them back on so the domes look untouched.

Serving Ideas

Serve them slightly chilled with coffee for breakfast or as an afternoon treat. Break one open at the table so everyone sees the creamy center.

Sugar-Free Chocolate Muffins FAQ

Why fill the muffins after baking?

A filling baked inside can sink or dry out. Piping it in afterward keeps the center smooth and creamy.

Do I need a cupcake corer?

A corer makes neat 1-inch holes, but a small paring knife works too if you cut carefully.

Why did my chocolate cream turn grainy?

The chocolate was too hot or the dairy too cold. Keep the chocolate lukewarm and the Neufchâtel and yogurt at room temperature.
