Thanksgiving dinner already has enough oven competition. This sugar-free no-bake pumpkin cheesecake never touches the oven, so it can go on the table next to the pie without asking the kitchen for another hour of heat.
The crust is whole roasted almonds, butter, and a spoonful of powdered allulose pressed into a 6-inch springform. The filling is Neufchatel, 0% Greek yogurt, real pumpkin purée, pumpkin pie spice, and gelatin, which is what lets it set in the refrigerator instead of the oven.
Twenty-five minutes of work, then at least six hours of chilling, and you cut eight wedges. Nothing about sugar-free no-bake pumpkin cheesecake ever asks the oven for heat, which is the whole reason it belongs on a Thanksgiving table.
If you want a pumpkin dessert that does get baked, my sugar-free pumpkin pie uses a 7-inch round pan, two eggs, and a thin almond crust for a custard slice. If you want something cooler and lighter to pass around, my pumpkin fluff dessert layers a spiced crumb base, pumpkin mousse, and a whipped topping and cuts into squares. This one is the plain slice: one cheesecake, one crust, no layers.
Why You’ll Love This Sugar-Free No-Bake Pumpkin Cheesecake
- No oven, no water bath, no thermometer. The gelatin does the setting, which means these sugar-free no-bake pumpkin cheesecake slices come out of a cold pan with a clean knife.
- Real pumpkin, not a mix. ½ cup of purée and 1½ tsp of pumpkin pie spice carry the flavor, and the ¾ cup of 0% Greek yogurt keeps the filling light rather than dense.
- A real almond crust. Roasted almonds pulsed to fine crumbs and pressed into the pan give a thin, buttery shell that no crust mix would match.
- A 6-inch pan on purpose. It makes eight tall wedges instead of a wide, shallow layer, so a slice looks like a slice and holds its shape on the plate.
- Made the day before. The recipe chills at least 6 hours and is better overnight, which is exactly the schedule a Thanksgiving morning already follows.
Every flavored cheesecake on this site starts somewhere, and for a lot of people that somewhere is my sugar-free classic cheesecake. That one bakes with two eggs and chills at least four hours. This pumpkin version takes the same creamy base, leaves out the oven, and adds purée, spice, and gelatin so it sets cold.
Ingredient Notes
The crust of this sugar-free no-bake pumpkin cheesecake is three lines long. ½ cup of whole roasted almonds (72g) pulsed to fine crumbs, 2 tbsp of melted unsalted butter (28g), and 1 tbsp of powdered allulose (12g) bind into something you can press with the base of your hand.
Use ready-to-eat roasted almonds rather than raw ones. They are the only nut the uncooked crust ever touches, and they come through with the flavor already in them and the color darker in spots, so the finished crust shows natural flecks.
1/3-less-fat Neufchatel cream cheese (227g) is what gives the filling its body. Beat it soft before anything else goes in, and give the mixer the time, because lumps of cold cream cheese will not disappear later.
¾ cup of plain 0% Greek yogurt (170g) replaces the sour cream and most of the cream, which is why the filling stays light enough to eat cold straight from the fridge. ½ cup of pure pumpkin purée (120g) is the whole dessert flavor, and 1½ tsp of pumpkin pie spice (3g) does the rest.
The sweetener is powdered allulose: 1 tbsp in the crust and ½ cup (70g) in the filling. Allulose is a rare sugar, and the FDA allows it to be excluded from the total sugars and added sugars declarations on the Nutrition Facts label. Powdered is the form to buy, because granulated allulose will not blend into the filling the same way.
Lastly, 1½ tsp of unflavored gelatin (5g) and 2 tbsp of cold water (30g). The gelatin is the entire structure of this sugar-free no-bake pumpkin cheesecake, so bloom it properly and stir it in fully dissolved or the filling will not set evenly.

How to Make Sugar-Free No-Bake Pumpkin Cheesecake
Read the whole thing once before you start, because the order is the recipe. The crust chills while you beat the filling, and the gelatin gets its five minutes to bloom before it needs to be used. Every step after that is just combining and waiting, which is why sugar-free no-bake pumpkin cheesecake is a calm first project.
- Line the pan base. Pulse the roasted almonds into fine crumbs, stopping before they turn paste-like.
- Mix the crumbs with melted butter and 1 tbsp powdered allulose. Press firmly into an even bottom crust and chill 15 minutes.
- Beat the softened Neufchatel and remaining powdered allulose until smooth. Mix in the yogurt, pumpkin, and pumpkin pie spice on low until creamy.
- Sprinkle the gelatin evenly over the cold water and let it stand 5 minutes to bloom.
- Warm the bloomed gelatin gently in short microwave bursts or over warm water, stirring until fully dissolved. Do not boil.
- Stir 2–3 tbsp of the cheesecake filling into the dissolved gelatin, then immediately mix that back into the remaining filling on low until fully combined.
- Spread the filling over the chilled crust and smooth the top.
- Cover and chill at least 6 hours, preferably overnight. Unmold cold and cut into 8 wedges.
Success Tips
- Stop pulsing while the almonds still look like coarse crumbs. A paste-like crust bakes up chewy instead of buttery, and this sugar-free no-bake pumpkin cheesecake is worth the extra minute in the food processor.
- Bring the cream cheese, yogurt, and pumpkin close to room temperature before they go near the mixer. Cold ingredients against warm gelatin is how you end up with a filling that sets in streaks.
- Do not boil the gelatin. Warm it in short bursts or over warm water and stir until it disappears completely, because boiled gelatin is the fastest way to lose sugar-free no-bake pumpkin cheesecake to a runny filling.
- Chill the full 6 hours before you unmold. A cold cheesecake releases from the pan cleanly and keeps a clean edge on the plate, which is the whole point of this sugar-free no-bake pumpkin cheesecake.
- Expect a firm, creamy set with darker almond flecks in the crust. It should hold a wedge on the server without collapsing.
Storage
This is a make-ahead recipe by design. The filling needs at least 6 hours in the refrigerator and is better overnight, so covering the pan and chilling it the day before is the normal way to make it rather than a shortcut.
Keep the cheesecake covered and chilled, and unmold it cold with a knife dipped in hot water and wiped clean between cuts. The recipe sets a chill and does not go past it, so treat this sugar-free no-bake pumpkin cheesecake as something to eat while it is at its best.
Sugar-Free No-Bake Pumpkin Cheesecake FAQ
Does sugar-free no-bake pumpkin cheesecake need to be frozen?
No. Unflavored gelatin sets in the refrigerator, so this sugar-free no-bake pumpkin cheesecake only needs the 6 hours of chilling the recipe calls for.
Can I make this pumpkin cheesecake ahead of time?
Yes, and it is the better plan. Cover it and chill at least 6 hours, preferably overnight, exactly as the recipe says, then unmold cold and cut into 8 wedges when you are ready to serve. Sugar-free no-bake pumpkin cheesecake is at its most reliable when the chilling is not rushed.
Why is my filling not setting?
Almost always the gelatin. If it was boiled, or poured straight into the filling without being fully dissolved first, it will not set evenly. Bloom it over cold water, warm it gently, and stir 2 to 3 tbsp of the filling into it before it goes back into the bowl, and sugar-free no-bake pumpkin cheesecake will hold a wedge.
Do I have to use a springform pan?
The recipe is written for a 6-inch springform pan, 2½ to 3 inches deep, and that depth is what gives you eight tall wedges. A straight-sided pan of another size changes how the filling sets, so keep to this one if you can.
Can I make sugar-free no-bake pumpkin cheesecake without gelatin?
Not with this recipe as written. The 1½ tsp of unflavored gelatin is the only thing giving this sugar-free no-bake pumpkin cheesecake its sliceable set, so leaving it out leaves you with a pumpkin soup you can still spoon into a bowl.
If pumpkin is not your thing at all, my sugar-free apple crumble is the other Thanksgiving dessert here: cinnamon apples under a loose almond crumble, with no crust to roll and no oven space beyond thirty minutes.
